Sure it is possible - what else do you think the -DCONSOLE_SERIAL or
-DCONSOLE_DUAL settings in src/Config are for ;)
They are even properly documented.  Etherboot supported serial console
for ages.  The only thing that was dropped is the serial console
support in the NBI second stage loaders - but this is not important for
the normal user, as it only prints a few lines before the loaded kernel
starts.  Even the menu can be used over the serial line (though it is
probably a bad idea to use -DANSIESC with a serial console, partly due to
Etherboot limitations).
