Most of the interest in diskless workstations seems to be along the line of the thin client concept or in clustering. I have done a little work, or play as the case may be, with the concept of building a ruggedized system for process control by making the processing nodes diskless and placing the 'delicate' hardware in a location that is evironmentally protected.
