I'm not sure you should make this link. The kernel might want to ask
it for characteristics, which a serial port will not have. Why not just
create the /dev/console device, since Linux will not write to it anyway.

Also have you tried booting this kernel from disk with the only the
devices you have in the NFS root? You may be missing some important
device like /dev/null or /dev/zero.
