In /dev, I have created a symbolic link console -> >/dev/ttyS0. I'm not sure you should make this link. The kernel might want to ask it for characteristics, which a serial port will not have. Why not just create the /dev/console device, since Linux will not write to it anyway. Also have you tried booting this kernel from disk with the only the devices you have in the NFS root?
